But companies face obstacles to selling overseas
Paul Hletko mixed yeast and water in a white bucket as he waited for a blend of rye, corn and malted barley to cool to 95 degrees. The right temperature ensures that when he adds in the yeast it will eat at the right pace, leaving behind alcohol.
"Happy yeast equals happy people," said Hletko, owner of Few Spirits LLC, a craft whiskey and gin distillery in Evanston.
